Sh. Mahmoud’s Cape Verdean Cachupa *  (Halal)

½ lbs  beef (cut into cubes)   and    ½ lbs chicken breasts (cut into cubes)**

1 Squash
1 Yuca (large)
1 Onion (large)
2 Plantains
1 Yam (large)
3 Tomatoes or stewed tomatoes
1 Lemon
¾  cup White Navy beans
¾  cup White Hominy corn - a must

1 qt. of vegetable broth

Cooking instructions:

Season*** the beef and the chicken ,  wash navy beans and hominy corn

Using a 4qt. pot add 3 tablespoons of olive oil, when heated add the chicken and the beef.  Stir fry contents for about 10 min making sure to sear all meats.  Add vegetable broth to cover meats and heat to boiling. Cover and allow to simmer for 25 min.  Add the Navy beans and White hominy corn.   Add more vegetable broth as needed.  Allow to simmer for another 25 min. or until the beans and hominy corn have become soft. Then add sliced squash, onions, cut yams, sliced yuca, stewed tomatoes and simmer for 15 minuets. Turn off the fire and allow to cool for 15 min. , squeeze some lemon juice into the pot and serve. 

 *Cachupa ( West African Stew ) is the National dish of the Cape Verde Islands

** Seafood, such as Cod Fish, shrimp, mussels etc. can be substituted.
