Old Fashioned Vegetable Soup

3 lb. Beef shanks, cracked

2 medium onion, chopped

1 qt. Water

1 can tomatoes

2 bay leafs

1 tsp. Salt

1 tsp. Course black pepper

¼ tsp. Marjoram leaves

1 c. Sliced carrots

¼ 5sp. Thyme leaves

½ c. Chopped celery


Cover shanks with water, heat to boiling, and add bay leaf and peppercorns. Reduce heat. Cover and simmer 2 hours or until tender. Remove meat from the stock and cut into ½-inch cubes. Strain stock into large saucepan. Add meat and remaining ingredients. Heat to boiling. Cover and simmer for 20 minutes or until carrots are tender. Makes 8 one-cup servings.
