Carrot Cake

1½ c. sugar, 3 eggs

1¼ c. vegetable oil

1-8 oz. Can crushed pineapple (strained)

1½ carrots, shredded

1 c. walnuts, chopped

2 c. flour

2-tsp. baking soda

2-tsp. cinnamon

1-tsp. cloves

 Beat sugar, eggs, oil until fluffy. Add flour mixture and beat to blend. Add crushed pineapples, carrots, walnuts. Pour into two 9” pans. Bake at 360 degrees for 35 minutes.


Carrot Cake Frosting

1 stick butter or margarine

6-oz. Cream cheese

3 c. confectioners’ sugar

3 tbsp. milk

Beat ingredients until smooth
