Hajj Mahmoud’s Sweet Potato Pie

3         large sweet potatoes

2         eggs

1 ½     cups of sugar (brown or white)

2         tbs of vanilla extract

½        can of evaporated milk

½         stick of soft butter

¼         tsp of nutmeg

½        tsp of ground cinnamon

2         unbaked pastry shells 


Boil the sweet potatoes until soft, remove the skin and cut potatoes into small cube like pieces.  Place the potatoes into a blender or large food processor and add all of the ingredients except the evaporated milk.

Blend for about 5 minuets making sure there are no lumps*.  Slowly add the evaporated milk and continue to blend for 2 more minuets.

Pour the mixed ingredients into the pastry shells. 

Let this sit for 5 minuets before placing into the preheated oven 350 degrees.

Bake for 60 minuets at 350 degrees  and remove from the oven


Sprinkle shredded coconut on top of pie before baking (optional)

*Put sweet potato batter through a colander to ensure there are no lumps if necessary
