A Vegetable Medley Salad

½ Small red cabbage, cored and shredded
1 large carrot, grated
½ Small green cabbage, cores and shredded
1 small turnip, grated
1 Red pepper, chopped fine
3 Stalks of celery, chopped
Salt and pepper
4 to 6 Scallions, shredded
½ c. Italian dressing
Combine the vegetables in a large salad bowl and refrigerate for about an hour. Add celery seed, salt, pepper and Italian dressing. Toss. Serve on bed of lettuce. Garnish with chopped parsley, cherry tomatoes, fresh dill and hard-boiled eggs.
Variations: Add tuna fish and bite-size pieced of chicken or turkey.
